Pepper Jack Macaroni and Cheese

Add a little kick to a classic comfort-food dish! Not only does pepper jack cheese add a little spiciness to the macaroni and cheese, but it gives it a nice creaminess that you don’t get with using just cheddar cheese.

Serves: Serves 4


Ingredients
1/2 pound elbow macaroni
3 eggs
1 12 oz can evaporated milk
1/4 teaspoon cayenne pepper (optional)
1 1/2 cup grated cheddar cheese
1 1/2 cup shredded pepper jack cheese

Step by Step Instructions
  1. Cook macaroni according to directions.
  2. In a large bowl whisk together eggs, milk, and cayenne pepper. Stir in cheese.
  3. Add cooked pasta and pour into a 2 quart casserole dish.
  4. Bake at 400 for about 20 minutes or until cooked through.
  5. Let sit 5 minutes then serve and enjoy!
