High Tides & Green Fields
is an 8-acre farm located in Middleberg, Oklahoma, owned by Kip Francis and Dev Vallencourt. We specialize in heirloom tomatoes and peppers, and garden-fresh salad greens. We grow lettuces and Oriental greens in our hoophouses all winter long.

In growing our plants and produce, we use no chemical fertilizers, pesticides, or herbicides. There are very few hybrid plants on the property— our preference is for heirloom, open-pollinated varieties. As price, quality, and availability are more important to us, we do not restrict ourselves to organic seed.

If there’s a special vegetable that you can’t find or don’t have room to grow, we will happily discuss growing it for you. Vegetables can be grown in quantity for special events, quantity recipes, etc.

Microgreens are tiny plants that are eaten when only a few inches high. The plants at that size have all the flavor of a mature vegetable. A radish micro, for instance, tastes like you’ve eaten a whole radish— without the burp.
Micros are used primarily as a garnish, but also add excitement to sandwiches, salads, baked potatoes, and cheese spreads. A sprinkling of mustard goes a long way on a sandwich or burger.
We grow four micros: Arugula, Mustard, Red Radish, and Purple Kohlrabi. We also offer a Gourmet Blend that includes lettuce. We offer our micros in clamshells, but can also deliver an entire 10×20 sheet at a much reduced price. If you have a catering business or restaurant, you may order by the sheet with regular or event delivery dates.
Our micros are living plants grown with a soil-less medium that may be stored in the refrigerator or walk-in cooler. With minimal care, micros stay fresh for a week to 10 days.

Certified Naturally Grown. No chemicals. No artificial stuff. We grow plants and vegetables with care, seaweed juice, and fish emulsion. We occasionally use Safer Soap or neem oil to kill a bug or two. (And last year we used nothing at all.) Our approach is all natural and as sustainable as possible. We sometimes eat our vegetables direct from the garden and don’t have to worry about what’s on them.
